Mastication, or chewing, is the first step in the breakdown of complex food. In humans, digestion begins in the oral cavity where food is chewed by the teeth (a form of mechanical digestion). Saliva is released by the salivary glands and is mixed with the chewed food. Saliva contains digestive enzymes which aid in the breakdown of food (a form of chemical digestion).
